Food is categorized in four nutrition categories.

Nutrition

The h key will show you detailed information about your current nutrition state.

In order to obtain and maintain equilibrium, you must eat a variety of foods and not simply spam one.

Allowing your vitamins to drop too much will result in Vitamin Deficiency. Eating too much of one vitamin will result in Vitamin Poisoning.

Both deficiency and poisoning can result in a physical debuff that can give screen effects, make your character pass out, or eventually die.

Processed foods such as meals or simply cooked meat give more food and vitamins than raw resources do. Meals can be created at the Cooking Pot and Grill.
